Familiarity: I've used it several times
I had been looking for details about differences between the Scoop Shallow Ultimate vs Pro but wasn't able to find anything too helpful. I was interested mostly in the flex of the saddle base between the two but there doesn't seem to be a review of the differences.
I initially purchased the Ultimate Shallow version. I was surprised to see on the scale the actual weight was 202g, not a big deal but expected it to be less than the advertised weight of the Pro. Installed it on my bike and it was a big improvement from the stock saddle, enough of an improvement that i moved it over to my gravel bike. It was also a big improvement over the Specialized Phenom i had on it. There is considerable flex to the carbon base, much more than I expected after reading other reviews. The leaf spring rails and flexible base are true to Fabric advertising.
I like the Scoop Shallow well enough to have also ordered the Pro version for my gravel bike. I received the Pro and the weight was 197g, even lighter than the carbon Ultimate version. The Pro definitely has more flex, feels even more compliant than the Ultimate. I am happy to have this on my gravel bike and prefer it over the Ultimate for gravel. Haven't had the Pro on my road bike to be able to tell if there would be too much flex.
Overall I am happy with the seat, lightweight and comfortable. Five star seat but four stars for the differences between actual and advertised weights.
