I think it comes down more to personal preference here. I personally like the "hard face" types of fleece much better than traditional "pile" types of fleece. Check out something like The North Face Momentum Jacket- it has quite a bit more stretch than your traditional fleece, and because of it's tighter weave, it doesn't pick up as much hair etc., and I also find that slides in and out of shells quite a bit easier too.

This jacket is for the minimalists who want complete weather protection. I've worn it with the North Face Thunder down sweater in -2 degree weather skiing in the backcountry in Colorado and was so impressed I thought about getting another in case the design changes next year. This is the perfect shell!

How does the hood stow in this jacket? I'm trying to replace
How does the hood stow in this jacket? I'm trying to replace a North Face jacket with a similar one - the old one had a roll up hood that snapped into the collar. But a lot of the current styles have detachable hoods which isn't what I want.

"stowable" means it folds into the collar, not detaching. This is what you're looking for.

The jacket doesn't have zip-in capabilities but does it have something by the sleeve cuff to attach a liner? I own a Nuptse down jacket and am looking for a gore-tex shell to wear over it for skiing in Colorado.

No. It doesn't have anything for attaching it to a liner. You don't need those features though. They make it nice, but they're not absolutely necessary. You should be fine.
