How good is this watch for recording accumulated vertical feet, as in downhill skiing, or cycling, or running? Also, do I have to keep the watch in the Altimeter mode all day in order to get the total accumulated vertical? The manual makes it sound like the accumulated vertical will be reset to zero as soon as I exit the Altimeter mode, ... like to check the time of day.

As with all of it's ABC functions, it is "fairly" accurate. Enough to make it worthwhile owning the watch anyway. You need to stay in altimeter mode for it to accumulate. Having said that, all other info is still on display albeit in a smaller format.
