If I ride a T6 159 normally (2008 model), what length Fish do you recommend? I've heard about downsizing when going with a Fish, but also heard the new 2009 Fish lengths take account that downsizing?? I weight about 185... with gear 190??

Burton recommends that you downsize 3 to 6 cm From Normal Board Length, so I'd go with the 156.
