would sizing down help with the flex?

Yes it would. More weight on the board means the more flex you can get out of it. However, the downside is if you are going to be riding powder, then the board may be to short for pow and the nose will dip. Also it may make so the board rides to soft in the pow and once again the nose will dip if the board is all noodley.
