I like longer sleeves. (5'11 140 lbs) Will the sleeves be long enough for me in the small or medium?

Probably not. I am also 5'11" but I weigh 200 pounds. I like longer sleeves too. The large fits me very well with comfortable sleeve length. The medium may be okay due to how how light you are. Ultimately it depends on where the shoulder seam hits you.
