Is it a big problem if I ordered a 120 mm skin and my ski is 134 mm underfoot? Or if i even ordered skins that were 100 mm will that work?

Not a problem at all. If you're in powdery snow you'll want skins as wide as possible, but for wetter snow 120 is more than enough.
