Alright, I am 6'0", 165-170lbs. I will be skiing groomers and backcountry on these bindings. I don't hit large cliffs on a regular basis. Will these work for me?

Dude these will be plenty good enough for your plans. You may even want to cut weight by going with the Black Diamond Fritschi Diamir Freeride Plus bindings if you'll be in the backcountry more often than the front side.
