I love my 2 pair of Barons (one AT and one Tele) but, of course I now want more, more stability at speed with the quickness and that great G3 springboard effect that the Baron has. porposing from one turn to the next. Does the Spitfire have what I want? Which length? My Barons are 184cm. I'm 5' 11" and weigh 180lbs and carry a 25 - 30 lb pack in the backcountry

The spitfire should give you what you want! I would suggest the 184 since you are used to that size ski and your height and weight.
