I'm looking to buy my first rope, so what does it mean by Double pick, under sheath construction. I know that the sheath is the outside covering of the rope, but beyond that...

Single pick and double pick are the different methods of weaving the rope's sheath - the single pick ropes weave each thread separately, whereas the double pick ropes combine two threads per each weave. Singlepick ropes will be stiffer due to the tighter weave, but will wear better because of that.
