Does the white material on the sea salt jacket clean easily or will it stain and turn to a dirty looking white?

It cleans very easily and is quite stain resistant. providing the staining agent is a high surface tension (water, mud, scmutz ofvarying consistancies, it will brush of with a little snow usually. ketchup, mustard and similar low surface tension agents will wash out easily still too.
