I have a helluwa hard time figuring out, what length to buy the Kungs in. I'm 6ft3 (192 cm) and 180 pounds (90 kg). I'm an intermediate to good skier looking for these as my 1-ski-does-it-all (or most, anyway) in the alps in europe (50/50 groom / pow). I've spent quite some time narrowing it down to this ski, now i only need to choose the length (179 or 189).

I am 6' 185lbs and ride the 189. Don't go smaller.

I would go with the 189 if I were you. If you have the opportunity to demo a pair, do it, but you will feel more comfortable on the 189 in my opinion. The early rise on the tip will help you with turn initiation on groomers, and not make the ski feel like it is too much ski for you to handle. It will also help you in the powder crush through some crud because lets be honest, most people don't get first tracks every run. The 179 seems like it would be short for your size considering that you have at least a little experience under your belt, but as said, if you can demo a pair, check them out first.

Depends on how 'good' of a skier you are. What skis do you use now? Do you feel super-confident on those skis? If you can handle almost any condition without much hesitation; and with your hieght; you should be able to handle the 189s. If you have the opportunity, you should demo the skis first. Even a similar ski in the same length can give you an Idea of what you can handle. On that note, every ski is different. Also talk to someone at a ski shop that sells them, as they have most likely tried them all and can give you insight. Ski Hard!
