I'm sure these would be great rain pants, but what would be the MHW model that would be better for backpacking AND snow/skiing? I'm looking into the Marmot Palisade pant as an option, but they only have large+ sizes left.

I'm seeing the Bokta with a built-in gaiter...am I missing something?

Anodos. I would check out the Hestia Pant if I were you. It is a little heavier in fabric weight but would be better for snow skiing for sure due to a built in gaiter and our highest performing DryQ Elite fabric. If you wanted to spend a little more money the best pant we have for the uses described would be the Bokta Pant. They are DryQ Elite (highest performance) 3-Layer, have removable suspenders, and no built in gaiter. The lack of gaiter would make them much nicer for backpacking. I hope this info helps!
