Do you need your brakes to be slightly wider than the ski waist or is an exact match okay? My skis are 100 mm under foot and I'm wondering if the 100 mm brakes will fit perfectly or be a bit too snug.

You should be fine with the 100mm brakes. If they are rubbing during deployment, you can trim some of the plastic from the inside of the brake or carefully bend them for and extra mm or two.
