Does the binding have to go in the ski center? I've never skied with a centered binding. If it does, will the adjustment me hard for an old-timer 60 year old Altaholic (1300 days at Alta).

for more of a traditional mount go 3 cm back from the mounting line. ski skis just fine.

you don't have to mount them center. If you are planning skiing switch (backwards) a lot then it would be helpful to have them at center if not then put them further back from the center
