I'm not the size/shape that backcountry typically builds for. Should I avoid these pants as a 5'11 190, 36X31? I'm concerned that the L will have too tight of a waist and that the XL will be crazy long.

I'd avoid these pants based on your stated measurements. If you're not looking specifically for softshell, then look into Trew Gear pants or bibs based on your size.
