I have a pair of sir Francis bacons, they are 115 underfoot. Would the 120 break be too wide?

They will not be too wide, it's 120mm across. So you will have 5mm on each side. That's 1/2 cm on each side. A very small amount. Nothing to worry about. You'll be fine.

They definitely will not be too wide. Any wider waist and you'd have to go with a larger brake or try bending it. You'll only have 5mm of clearance with the 120mm, but that will work just fine.
