What does the temperature rating mean? does it mean that once that point is passed the matt will no longer keep you warm? or that the air will start to seep out?

Hi Evan, you were right the first time. This rating is similar to the rating of a sleeping bag. It will retain its insulation value down to the rated temperature. Beyond that rating you will begin to feel cold.
