I want to use it two ways: First, on the ground. Second, on the little counter of my camper van. Question: When operating on my van counter top, without the legs deployed, will it be too hot for the counter top?

Yeah, it is going to get very hot on the bottom of the stove... if you don't want to use the legs, you might have to find something to put between it and the surface you don't want to damage.
