any recommendations for the mounting? Is it good to go for the center that company recommends?

I think I would recommend -1 cm. I'm 5'8" 165 lbs on the 188 cm, and ski them at -2cm. They felt a hair forward at 0, and a little less quick edge to edge at -2. Since I've purchased a big day ski, I think I'd want my S7's at -1 cm.

Most people should stick with "traditional boot center" aka "zero" or the factory recommended mounting point. Despite having a turned up rockered tail, the oversized spoon tip and skinny by comparison pin-tail cause the S7 to be a pretty directional ski. I have spoken to quite a few people that have opted for plus 2 cm or minus 2 cm and most of them wish they had stuck with plain old zero. People who mount forward of zero often feel like they are about to "go over the handlebars" if they get out over the ski. Mounting back of zero does not leave you with much tail on the ski. If you are a fairly traditional skier, stick with traditional boot center.
