How big should I go? I'm an aggressive skier at 6 foot 3 inch and 190 pounds. I'm going to be using the skis as an AT setup for conquering big mountains and fourteeners in Colorado. should I go with the 181 or 188 cm?

The 188 would be a much better fit.

181 for the skin track up...188 for the down. I'd go 181 for true touring and ease of kick turns, although at 6'3" you might be fine kicking those around going up...but they are a long 188. Jack Roper, Dukes on Coombas? Why? Dukes on Hardside or Sidestashes, but why go for the compromises of the lighter coomba if you're going to defeat it with the tank-ass Dukes?

I'm 5'9" 150lbs, moderately aggressive, and was perfectly happy with the 181 length on last year's model (same ski). Being bigger and more aggressive than me, you might find the 188cm to be more your style.
