Jordan from MK here:
Great question, detailed answer. We build a small amount of length into our pants because like any cotton product, MKs CAN be shrunk if washed and dried hot enough. However, the shrinking will not be such that you'll need to go to a different size. For a guy 5'11"-6'1"or 2" the 32" inseam should fit perfectly.
MKs are preshrunk in that the fabric is washed and dried twice before it ever hits the retail floor: once pre-fab, and then garment-washed (post-fab) so that the stitches, zipper, waistband, etc all fit consistently.
MKs are built and designed to be true to fit... for life. That is, if you were to take a tape measure around your waist and inseam, what you get will be your size in MK. The goal is to have a comfortable and consistent fit throughout the life of the product so you shouldn't expect them to fit very differently, if at all, than the way they do the first time you put 'em on.
Long-winded answer, but hopefully that's helpful for you and others.
