I'm 1.80m tall, for 2 extra centimeters, should I buy the long version ? or the regular would be confortable enough ?
Is this bag offering much more space for legs than a mummy bag ?

At less than 2 meters tall I think you definitely want a regular length bag!

Given the rectangular shape, you should be fine in the regular. But if you want to stuff extra gear inside the bag to keep warm or want some extra comfort space, go with the long. And yes, it offers quite a bit more leg room than the mummy bags. With the rectangular, you should be able to keep extra clothes between your legs comfortably.
