I have gone down class III rapids on my Tarpon 110, but have only made it all the way through once still on top of the kayak. But...........flipping over can be fun, too.

depends on what your plan is for the Guadalupe.... What part and what time. If your just planning on fishing or hanging out with the tubbers/floaters this should be more than enough boat for you 99% of the time. You can float in an inner-tube with beer coolers, you'll be fine. But like Cory said, check out some local info before you jump in.

A kayak like this is designed for calmer waters and is only suggested for use in waters classified up to about class II. I see the Guadalupe is rated class II-III. Not to say the Tarpon can't handle some class III rapids, but, I would suggest contacting your local parks department for current conditions and their recommendations on which types of boats will be suitable.
