I am not all that familiar with these bindings, so to some of you this may seem like a stupid question
Are these bindings adjustable for different bootsole lengths like most bindings, or is this one of the few bindings which can only be set up for one boot

Not a stupid question at all. Short answer: they are VERY MINIMALLY adjustable, but basically only to tweak forward pressure. Long answer: the Pivot heel has a great release function, but it relies on centering the heel of your boot on top of the rotating baseplate, which is fixed to the ski. Moving the heel of your boot would change the axis of rotation, which is bad news for your knees, so Rossi makes the binding largely non-adjustable.

They are adjustable, There seems to be a little less adjustability than other alpine bindings but it can be done.
