Are these ideal to wear under hiking pants? I am concerned about early morning hiking in the Grand Canyon in October.

They will work great, the Grand Canyon will be cold in the morning but you may find yourself shedding a layer if you tend to get hot quick. In such event, maybe also look into a lightweight baselayer vs. a mid.
