Would this be a good jacket to take on the Appalachian trail (i.e. weight and durability)?

That jacket should do very well, It is light enough and has pit zips for venting out heat and will keep you and your base layers dry. But as your only means of insulation it is far to light for the northern section in late fall, early winter.
