I would like to purchase a softshell similar to the Apex Bionic, but with a removable hood. Can anyone help me out with some suggestions?

I have a Apex with a hood. It isn't removable, but is a very nice addition to the jacket when needing to shield my big fat head.

This is probably the closest thing I can find to what youre looking for. I has a roll up hood. I think thats going to be the closest thing you can find because I dont think any companies really make fleece/softshell jackets with zip off hoods. Hopefully this one works for you.
