3 nights easy! With an ultralight kit 7 days are more than doable with 50L.

I recently had a buddy do a 6-night 50-mile trip with this on the AT without any issues. Depending on the climate you'll be traveling in, you should be ok.

In good weather (Late spring to early fall here in MN) this is about the size I would go with for that long of a trip.
