I'm a 6' 235 lb man that likes mountains and good spirits. I thought the xl might be to big. Does the windstopper shrink in the wash? Should I go for a large?

As long as you wash it according to the manufacturer instructions, it should not shrink noticeably. As for the size, I'm 6'2" 240 and I always go for XL.
