I think you are right on. The Boxer Brief is a tighter fit and will be super comfortable!
the Boxers fit like traditional boxers, loose. I wouldn't say uncomfortable, but they fabric will bunch up under a tight fitting baselayer.
and yes I would recommend a size small.

The Drylite does have vents across the top of the shoulders. The main benefits of this shirt are - quick drying, loose fit (breezy), sun protection and comfort. It is very light weight without loosing durability. It is wrinkle resistant and should look presentable the entire time you are on your trip, unlike cotton. If the Camino is the one in Spain, this shirt would be a perfect choice for this type of adventure!! Have a blast.

the ExOfficio Go-To skirt is 27" and it can be hemmed, easily depends on the sewer;) If I did it, it would be like splitting adams and not turn out well. But someone good on a Singer, would rock it!

Well while they are not "swimwear" I have to admit to using them in hot tubs and pools myself! I was cautious and made sure to use a towel when walking around but I have had them for over 3years now and while it is not recommended, it didn't seem to hurt them for me. But Chlorine in hotels can be really high and could discolor the material. So, I guess caution is the best advice.

The waistbelt is much larger, it is built to carry moderate loads and wrap your hip bones to support the pack. The webbing is only for the buckles.

Optimally your hip bones need to be about 2-3" inside from the end of the waistbelt. It will fit anyone from a 30-38" waist, but it also depends where you measure (remember the top of your hip bone needs to be in the center of the belt not at the top or bottom- there is a stitch line here to help). The straps should be "snug" but not restrict breathing; the forward strap should not interfere with the front legs but should be on the rib cage near the sternum. It may take a few tries to get the position where it is comfortable. Hope this helps!

No chest harness, but check out the Mountainsmith Zoom Med, I just used this on a backcountry ski trip and it worked great! It comes with a waist strap to hold it tight against your body and a should strap to keep it up.

#2- Water sports- Yes and yes. While swimming in them alone may not be visually satisfying for the other participants, they work, but I would recommend holding them if you plan on doing any cliff diving.

The Inscect Shield socks from ExOfficio are very safe. The FDA has to approve and give ratings to any chemicals for personal use. According to this scale the ExOfficio socks require no warning labels. The permetherin (the active ingredient) is added at temps of over 250 degrees and can only be removed at those temps, so dry cleaning is your Insect Shield socks is out. According to their own test data, there is no "leaching" out with use.
