When I first bought this boat, I kayaked solo in several lakes on my way back down the eastern sierras in California. Not a problem. Not the ideal, but certainly comfortable. The seats are adjustable so you should be able to find a comfortable position.

A rudder DEFINITELY makes it easier to paddle in a straight line. If you can afford it, get it. Well worth the extra money. I don't have one on mine yet, but will get one soon. I have a rudder on my solo ocean kayak and it makes a huge difference. Instead of adjusting your course through your paddle strokes, you just keep on track with simple foot pedal movements to control your direction with the rudder. It's worth it!!!

I doubt there would be that much room, however, there is some room behind the rearward seat and some room in the front hull. There is also the netting on the forward deck..... still, I doubt if you could fit all that gear and food etc in this boat. You could also put some stuff between your legs, but it would be "iffy".....

this kayak is pretty stable, but if your dog is jumping around and moving from side to side, you may not stay upright for very long. But for most purposes, it's a very stable kayak.

I wouldn't worry about the front seat leg room. I've had a 5'8" person up there with plenty of leg room. Just slide the footpegs forward. Leg room is not a problem.

I have a fiberglass QCC cockpit kayak, but this tandem is pretty nice when you want to kayak with someone. It's very stable and relatively easy to paddle. When I picked it up, I kayaked several lakes in central California by myself and it wasn't difficult at all. You can slide the seats around to several different positions which makes solo kayaking possible. Also, the seats can come out very easily which is great when you want to come ashore and just relax.... no need to carry other gear and certainly more comfortable than just sitting on a blanket or towel. And the seats are surprisingly comfortable. Maybe the biggest reason to buy this tandem over others. Mine seems to have a tendency to track a bit left, but not a huge problem. I'm looking to fit it with a rudder which should make for much easier tracking..... but certainly not necessary. I'm very pleased with it. Again, the adjustable/removeable seats are the biggest selling point on this tandem.
