The Ironman Shock has a less cluttered, higher contrast, more legible dial than the comparably priced G-Shock DW9052.

It's 42mm in diameter and 14mm thick. So, it's a fairly substantial watch, but not the "oversized" style that seems popular today. I don't know about Polar, but this watch is about the same size as a G-Shock DW5600 and a bit smaller than most other G-Shocks.

If by "mate" you mean, are they zip-in compatible, then I don't think so. This is a pretty basic, no-frills rain shell. You can definitely wear this over a fleece base layer, but I don't think it has any attachments to connect to it.

Patagonia Torrentshell Jacket - Men's

I think you'll find that the Torrentshell is similar in waterproofness and breathability to other jackets in its general price range. From short afternoon hikes in the rain to summitting some of Colorado's Fourteeners in driving hail, I can tell you that the Torrentshell material is completely waterproof. The only weaknesses in its waterproofing are the front zipper and pit zips, which have storm flaps, but are not waterproof. So if you find yourself in genuinely torrential downpours for hours at a time, you may find that water enters in those areas. It's the cheaper storm flaps that put the Torrentshell in its current price range - the Patagonia Rain Shadow jacket is essentially identical to the Torrentshell, but at $60 more expensive, it also comes with waterproof zippers.
From what I've observed, breathability ratings (even moreso than waterproofness ratings) are essentially manufacturers' attempts at objectifying things which are inherently subjective. 20,000mm and 5k certainly sound "sciencey." But the cute little lab tests they perform in order to ascertain their "ratings" are so far removed from practical application that they are next to useless except as very broad generalizations. There are dozens of variables that affect how well a given material will perform, from how well you clean and maintain them, to what the specific weather conditions are like, to your own personal "climate" in terms of the heat and moisture you generate and your personal humidity tolerance. For one thing, not all manufacturers use the same testing standards. Helly Hansen, for example, tests its materials after 5 wash cycles... which is nice for them, but sort of ruins their results as a measure of comparison. Gore, on the other hand, doesn't release waterproof or breathability ratings at all. Additionally, the manufacturers typically only test the waterproof membrane itself - not the fabric it is later applied to, much less the garment made from that fabric. The best that we, as consumers, can presume is that no material is both totally waterproof and perfectly breathable. And cheaper materials sacrifice breathability, or waterproofness, or both, to at least some degree. Aside from that, you will have to rely on the experiences of your fellow outdoor enthusiasts, as well as your own, to determine a jacket's breathability.
Having said all that, I would still recommend the Torrentshell for a low-price rain shell. H2No is just as good as other brands' similarly-priced materials. But Patagonia's quality of construction, attention to detail, and dedication to the environment all contribute to a piece that compares very favorably to similar products from other manufacturers.
I realize this is probably way more info than you wanted, and it doesn't directly answer your question, but in general I think you should avoid relying on a manufacturer's own ratings as absolute indicators of a product's quality or performance.

Patagonia Torrentshell Jacket - Men's

I'm close to your size, 1.75m with a 36/37 chest, and I wear S in all my technical outerwear. The Torrentshell has a slightly athletic cut, with just enough room to comfortably fit an insulating layer like a midweight fleece. It's not skin-tight but it's not boxy or oversized like comparable TNF or Columbia products.
In my experience, you'd be hard-pressed to find a rain jacket or technical shell that is more fitted than this. Luckily, if you do find the S too baggy, Patagonia is one of the few technical outerwear brands that offers men's size XS, though you might have to go directly to their website to find them. http://www.patagonia.com/us/product/patagonia-mens-waterproo

If you can't find Hestra-specific balm, or don't want to order it online, keep in mind that any waterproofing leather conditioner will accomplish the same thing. You can buy leather treatments at virtually any sporting goods store. I use Sno-Seal and Schnee's Premium Leather Conditioner, they both work great.

Mountain Hardwear Cutaway Jacket - Men's

From the product specifications, it looks like this jacket fulfills all your needs. The jacket has synthetic insulation so it should be warm for those cold Midwestern days (I lived in Minnesota for 5 years so I know how it gets!). The softshell exterior, with a durable water-repellent finish, will protect you from the worst snowfalls and moderately wet conditions. The included powder skirt will seal out any snow that might otherwise creep up the jacket if you take a spill.
This jacket should be fine if you're looking for something that's warm and insulated, and will protect you from snowy conditions. I've skied, snowshoed, and hiked through Montana, Minnesota, and Colorado, and a softshell jacket has always provided me with plenty of weather protection.
As a long-time Backcountry customer and fan, I can also tell you that their no-questions-asked, infinite return policy is second to none. If you get the jacket and you realize you hate it, whether ten minutes from when you open the box, or ten months, they will take it back for a full refund, no questions asked.

Depends on your conditions. If you live somewhere like Colorado, Utah, or Montana, where it's snowy as heck but very cold and dry, then a water resistant softshell like this is probably going to be plenty of protection.
If you live somewhere like the PacNW, with warmer and wetter winters, or where conditions of mixed snow/rain are fairly common, you might want to get a fully waterproof shell.
The other thing to keep in mind is that if you do a lot of aerobic work in your jacket (backcountry skiing, climbing, hiking, etc.) a softshell is generally going to breathe better. If you mostly ride lifts and frontcountry, that's probably not a consideration for you.

New Balance 100 Trail Running Shoe - Men's

All right, Steve... after having them for just a day, here are my initial observations: First of all, the NB 100 is a VERY light shoe. Even lighter than the Nike Free. The fit and feel of these is basically like a racing flat. The forefoot isn't particularly flexible, but the sole has got enough overall flex that it's easy to run with a midfoot or forefoot strike. One of the big differences between these shoes and the Nike Frees is cushioning. The Nike Frees are very flexible, but they've also got a bit of squishiness going on between your foot and the ground. Not so with the NBs. The sole is very flat, very thin, and somewhat hard. In a way, this probably makes them less forgiving of your running technique than the Frees. The sizing is quite similar to the Frees, in that they run slightly small, though I think the forefoot especially is slightly narrower than in the Free.
Two things about the NB stand out as not so good... the first is that the plastic support thing on the back is not well-designed and will probably cause blisters on your Achilles area. That's something that may require some patience in terms of breaking the shoe in, or developing a sufficient callus. The other odd thing is the smell. The material on the soles has a VERY pungent, chemical smell. It's strong enough that it actually stank up my room while I was away at work today. Very strange. Hopefully that will go away over time.
So, in sum, these are definitely a huge leap forward (or... backward?) in minimalism from most trail runners, from what I can tell, though different from the Frees in that they are slightly less flexible, and slightly less cushioned. A solid, but flawed, shoe. In the course of my internet searches, however, I've found that they are discontinuing the 100 as of this September and introducing the 101 which addresses some of the flaws of this shoe (notably the heel-biting, and making the sole slightly more flexible).
