Do you guys set the binding based on ability/weigth etc... Or...

Do you guys set the binding based on ability/weigth etc... Or do I need to bring them to a shop?

without doubt, if you are asking this question you need to take it to a shop. if you love your knees then you will take them to a shop. the twenty bucks you will pay for a binding adjustment is far less than an emergency department bill. also remember to bring your boot!
