I'm a big fan of these, but I use them primarily for walking around town during the winter ( about 20 degrees Fahrenheit). They are really well put together and feel amazing to wear compared to synthetic long underwear I've used. I have a size small and typically wear Levi's 30x30 in jeans and they fit me pretty well.

I just received a pair of these bottoms and had a chance to test them on a 3 mile snow hike in single digit temps in a foot of powder.

I wore them as a base layer under my (insulated) Spider Troublemaker pants. I stayed perfectly warm the entire time without issue. I do wish the bottoms had more elastic in the ankle as I felt that they may ride up my foot over time.

What's the fitting like?

I'm stick thin. If I had any meat on my bones to speak of, it would be "skin tight", but mine have a big of "room" to them due to my size. If you're average, they will fit as intended. Waist sizing (I wear a 30) is accurate.
