I have a stock Giant OCR2 from 2006 (I think), 105 components.

I have a stock Giant OCR2 from 2006 (I think), 105 components. It has a 3 sprocket crank. Someone told me that changing to a 2 sprocket would make for better shifting, and that I could go down to a 2 with no modifications. Is that true, and would this work? Would I need anything else?

Not completely true.
1st, if you change to this particular crankset you will need to get a matching bottom bracket.
2nd, you might be able to tune the front derailleur to shift a double instead of a triple but it will not be very smooth or consistent, you would be better off getting a front derailleur for a double instead.
3rd, your current rear derailleur is a long cage model which is used to handle the longer chain req'd by triples. Running a double would shorten the chain and cause your current derailleur to not function properly.

Nope. This is last years model, the 7800 series. The new stuff looks better and is the 7900 series.
