What is the difference and/or logic behind the all black face and just the regular looking gray face?

Purely for looks only...there is no increased functionlality with a Negative(black) face or Positive(regular) face.

Not too sure, but it may be for when you are in really bright conditions. I've never used an all black face watch before, tho.
