How would these shoes be for use on the AT. Maybe with a 25-35 pd pack?

Depends. If you have good ankles and are not prone to turning them and want to travel light and fast they would be fine. At the upper end of your weight range and on the sections with lots of elevation changes and rocks and roots or if your ankles like to roll you might do better with the support of a boot.
